DIY 'ALMOST ORGANIC' POP TARTS

I miss the pop tart days (same as the lemonade stand days and the ice cream truck days) and I decided it was time to bring them back into my life. Sadly, I have some allergies to basically anything "unnatural," (probably a good thing in the long run) so buying pop tarts from the store isn't really an option for me... But DIY organic pop tarts are! The only thing that makes them not fully organic is the sprinkles. I looked into a few options for organic sprinkles, but it's hard to make them cute and colorful with natural dyes. I decided a little bit of danger was worth it on these, but you can totally make them without the sprinkles or find another way to decorate!

I decided to call this a "DIY" instead of a true recipe, because I didn't do all that much besides put the pieces together and stick 'em in the oven. In fact, even our oven has been completely broken for the last few months (don't get me started), so I made all of these in our handy toaster oven which fit 5 mini pop tarts at a time. 

If you want to truly hand make your pop tarts, Pinterest is full of recipes for the dough and the filling, but I wanted something quick and easy:

INGREDIENTS:
Pre-made Organic Pie Dough (I got mine from Whole Foods)
Organic Chocolate Almond Butter (or Nutella!)
Organic Powdered Sugar
Organic Almond Milk
1 Drop of Organic Almond Extract
Natural Food Coloring (I used Hibiscus Extract from Whole Foods, but it did not really work)
Sprinkles

DIRECTIONS:
1. Defrost and roll out the pie dough.
2. Cut out rectangles, two for each pop tart, whatever size you want!
3. Spread chocolate almond butter onto every bottom piece, leaving some room around the edge.
4. Place the top layer of dough on each bottom layer, and re-work the edges together so they don't separate when you bake.
5. Press down around the edges with a fork to make those cute pop tart indents!
6. Bake at 350 degrees for 15-20 minutes, until golden brown on top.
7. While baking, make the icing by mixing powdered sugar, a little bit of almond milk, 1 drop of almond extract and food coloring (optional). 
8. Let pop tarts cool, and then spread the icing on top and add sprinkles!

It was so, so easy and even though the food coloring didn't really work, they still turned out really cute and delicious. This time was just for fun, but they'd make a really cute party food so I'll definitely be keeping them in mind for the future. 

p.s. I really lose my patience with detailed recipes, and I prefer experimenting a bit when I bake and cook, so please forgive the lack of precise measurements for each ingredient! It's truly very easy to figure out yourself, but here's a real recipe that inspired mine in case you need some more details.
